1 garlic clove minced
2 teaspoons finely grated fresh ginger
2 heaped tablespoons finely chopped fresh coriander
1/2 cup lemon juice
2 free-range skinless boneless chicken breasts cut into cubes
2 large onions cut into pieces suitable to place on skewer
1 large mango sliced
12 mushrooms whole or halved depending on size
1 green capsicum seeded and cut into pieces for skewer
Mango Sauce:
1 fresh mango peeled and chopped
1 heaped tablespoon parsley finely chopped
1 garlic clove minced
1 teaspoon fresh grated ginger
1 pinch chilli powder
1 teaspoon allspice
1 tablespoon honey (or 1 teaspoon Nature Sweet Sugar Substitiute)

Combine all marinade ingredients and marinate chicken overnight.
Arrange chicken pieces with other ingredients alternately on skewers.
Grill or barbecue until chicken becomes golden.
Blend all sauce ingredients in a blender until fine.
Serve with the kebabs.
Sauce can be served hot or cold.
